8. What safety features does the deep fryer include? Some fryers have a high limit thermostat and an interlock, which cuts the power if the fryer head is not in place.

• Preheat your deep fryer before use
• Use a good quality frying oil for best results
• Do not exceed the recommended batch weights; small batches of fried food cook more quickly and absorb less oil
• To prolong oil life, remove frying baskets and cover with lids when not in use
• Remove food residues during use to reduce oil discolouration and flavour impairment
• Filter the oil daily and top up regularly
• Think about having a dedicated deep fryer for vegetarian food
What to consider when choosing a chip scuttle
1. How long can the scuttle maintain fresh from the fryer taste? – some scuttles will hold chips and other fried products at perfect serving temperature and condition for 20 minutes
2. Does the scuttle have a perforated drain plate to keep chips crisp as well as providing easy access?
3. What parts of the scuttle can be removed to help make cleaning?
4. What level of adjustable temperature control is available? Could the scuttle be used for other potato products such as wedges or hash browns?
